Preparation & Marinating
In my opinion Ribeyes & Strips are the best cuts of meat. I prefer the fat to add extra flavor, something the Filets lack. For Strip steaks, I get mine around 1 1/4 inch to 1 1/2 inch thick and Ribeyes around 1 1/2 inch to 1 3/4 inch thick.
-Once I get them home, I individually wrap and seal them in the freezer.
-For defrosting, move steak to fridge and allow overnight or 18 hours for it to defrost properly.
-I then add my marinade, Southern Flavor Garlic Seasoning and Dale's Low Sodium Blend. I apply generous amounts of both.
-Allow steak to marinate at room temperature for a minimum of one hour. It is important that you allow the steak to reach room temperature, failure to do so will add cooking time and odds of not reaching the wanted doneness.
